Recipe of the week - Dinner: Simple and Delicious

Dinner doesn't always have to involve so much time and

effort. Last night I wanted to make something simple, fast,

and yet delicious...and I did! Don't over complicate your

meal planning. Try using items that are often in your

refrigerator, on your counter, or in your spice rack.

Broiled Cod, Steamed Broccoli, and Sauteed Zucchini and

Yellow Squash

Ingredients:

1 lb wild caught cod

1-2 tbs butter (Yes the real kind! We typically use organic.)

salt, pepper, garlic powder, paprika to taste

1 bunch broccoli

water for steaming

~

1 Zucchini

1 Yellow Squash

1 tbs extra virgin olive oil

1 large clove garlic

salt and pepper

Instructions:

Prep your veggies. Slice the zucchini and yellow squash in
rounds. Cut the broccoli off of the stem into bite size crowns.

Make sure your oven rack is set up 4 inches from the
top/broiler. Preheat your oven to broil. Season the cod on
both sides with salt, pepper, garlic powder, and paprika.

Melt the butter in a small bowl in the microwave and brush
both sides of the cod with the melted butter and set the cod
evenly spaced on broiler pan(I put foil on the pan for quick
and easy clean up).

Meanwhile, fill a medium saucepan with an inch or two of
water. Boil the water, once it's boiling turn it down slightly,
place your steamer basket with the broccoli on it into the
pan, cover and steam for about 7-8 minutes or desired
doneness.

Add the olive oil to a medium saute pan and heat on
medium, use a garlic press to press the garlic clove into the
oil. Add the zucchini and squash, season with salt and
pepper, and saute until desired doneness. Again mine were
ready in about 7-8 minutes.

While the veggies are cooking, place your fish in the
preheated oven and broil for approx. 6 minutes.

Voila, dinner is ready and you can enjoy!!
